However, my pal who runs a restaurant gets it for all of their spicy Mayo additions. Adding to the conversation, I also add some msg or salt to my finished Mayo products. A little soy mixed with sriracha.

Spicy mayo will vary. Easiest is kewpie mayo and sriracha but there are many many other options. Best bet would be to ask the restaurant directly - if they won’t give the full recipe ask at least if it’s sriracha or something else and you can figure out the mayo separately.

You blend the onion with everything except the mayo, then mix the red mixture into the mayo. You can just buy spicy mayo that's in any grocery store but this recipe is way better.

Used a brown ale to flavour it, then loaded it with Sriracha & a sambal oelek for heat & funk, and a nearly ridiculous amount of lime juice & super finely grated zest.
